You probably do it because it usually works. If you were playing in Premier League you probably wouldn't get away with this style so easily, as defenses would clear these volume-crosses routinely. The Celtas and the Eibars always find ways to fuck up and leave players unmarked. Like how Osasuna did it the other week.
