Anyway, has his level dropped since that time (because he wasnt as bad back then imo) or his flaws just being exposed now because our team is weaker now?
He benefited a lot from Valverde's defensive setup. The midfielders would do a better job covering the CB's too and overall we didn't play as far up the pitch as we do now. He got exposed heavily as soon EV left. He is exposed heavily now because he has to be in situations where he never was during EV's tenure (1v1 vs speedy attackers/wingers, have to defend against lob balls when entire team is already far up the pitch, etc.)

If Umtiti is not injured, I would play Araujo - Umtiti pair against PSG

Setien preferred at the beginning Umtiti over him for a reason: he wanted to play a high line
Umtiti is too slow and clumsy to face Neymar and Mbappe. That's why I would play Mingueza and Araujo.

Lenglet and Umtiti for their faults are better defenders and better on ball than Mingueza.

Lenglet will give them at least one penalty or red card in one game. At least with Mingueza its not guaranteed.
Lenglet is better than Mingueza at just about everything even when been poor.
Araujo/Mingueza back two is about as bad as it can get for so many reasons.
Lenglet/Umtiti will be lucky that Mingueza is next option as anyone half decent they wouldnt play on front of.
Lenglet is way worse in 1vs1 than Mingueza. Mingueza is actually fast.
