Mostly because at Ajax there was a lot of movement from players without the ball. Therefor there was always a passing option instead of being run down by an opponent. Here we see Arthur en de Jong being stuck more often between the opposition, pirouete is one technique to move yourself free.

He grew as the game went on, which seems to be the trend for him. So good in that deep role where he has maybe the best instincts in all of football for making supporting movements/plays. When the front 5 are under pressure and have to recycle possession to FDJ, you know the buildup will be reset in a progressive way that leads to another good attack.

Breaks up attacks when needed, recovers the ball when needed, makes runs from deep with the ball or without it and helps construct sophisticated passing moves. If we had better players off the ball out there (like Griez/Fati) he'd look even better.
