Sane was underwhelming, so Coman and Gnabry took the reigns. Now that others have dipped in form, Sane's taken the reigns, performed well, and the team's quality is effectively the same.
You're essentially arguing that we should only have two options for wingplay: Fati, and Dembele. We've seen just how vital pace is to augment our attack, and you want to hand the reigns to an underdeveloped Dembele (who will most likely never develop at this stage), and an 18 year old in Fati. Look at any squad building for any elite team in the world, it makes no sense.
Adding Mbappe and a quality CF, not only makes complete sense, it's a step closer to having an optimal attack.
