There are rumors that Praet will be confirmed soon as Banega's replacement for around 10M. He was highly rated some years ago but I didn't really follow him much. It will be hard to fully replace Banega though.
They are apparently also interested in Lucas Perez (Depor) and Keko (Eibar). But if Monchi really has that much money to spend he'll probably get 8-10 new players as I doubt he'll really go after 20M+ players except for maybe paying Perez's buyout clause (or close to that; I don't rate him that much but Monchi clearly likes him if the rumours about that are true) so I'm really interested to see what he'll do. I think they need to improve defense and will target one younger CB and some starters like Gameiro, Tremoulinas or Krychowiak could leave so he'll need replacements for them as well. It's also questionable how Krohn-Dehli will return after that injury at his age. Improving bench will also be important as they seems to have a lot of injuries every season. Don't know if it's just a bad luck or if something is wrong with their fitness preparation or training process. If I remember correctly Valencia also had a lot of injuries during Emery's time there so maybe injuries are really somehow related to his training methods.

Sevilla's cantera have been more active than before lately. This season, they participated in the Uefa Youth League (for the first time) and also did a great job to enter the play-offs for promotion in the Segunda. Now they will face Logrones in the second round, and with a bit of luck, we can see Sevilla Atletico in Segunda Division for the coming season.
The fact is that there hasn't been a lot of space for promotion, with Emery being focused mostly on winning silverware, namely EL and CDR, and for that you will need experienced players and strong starting lineups. There was too little chance for a cantera to blow up, beside the goalkeepers. Both Rico and Soria (the EL "hero") are canteras that have made it to the first team, and successfully that, especially Rico.
As for Munoz, Cotan and Curro, to be honest, only Munoz showed some glimpses of hope in the last pre-season, by scoring some good goals and contributing well in the attacking build-up play. I think that beside Munoz, none of the other players in the cantera would be ready to step it up to the first team and have an important role there. The ones that made a couple of appearances with the first team, like the 3 you mentioned above, will probably go on loan or be sold, as now with the money that Monchi will have in disposition, and with Emery aiming to create an even stronger team (hopefully so), beside Rico and Soria, I don't think there will be any other homegrown players in the starting lineups of Sevilla, at least not in the important matches.
For everything going on though, including injuries, cantera development, philosophy of the game etc. surely the manager (in this case Emery) has an immense impact. I guess you're right about the assumption that Emery's training methods are the culprit of many injuries (by the way I doubt MKD will ever fully recover at this age), the same discussion was going on with Van Gaal's case at Man Utd. They had the most injuries in the history of the club this season I think, and the fans blamed it solely on Van Gaal's training methods.
