They weren't losing the ball instantly in every situation. Often they kept it by passing it back all the way to the defense and Navas. Sometimes they organized counters successfully. The way PSG set up made it easy to pin them back in their half, and it is easier to press a team that is in its own half.

PSG is an old fashion galactico team where you have a clear separation between players that do the offensive phase and players that do the defensive phase. This leads to constant superiority for the team that involves more players in both phases.

The PSG model has been simply outdated and superseded by modern tactics where everybody does both phases. They are outworked easily. Now even the keepers are active assets in breaking the press and passing from the back.
