It happens in pro football because keepers have a lot of space to close down and they take that risk, as strikers go for corners, it's both instinct and training from a junior level (i can personally vouch for that).
As for deflections, pro football is rather crowded, the time frame to get a clear shot is narrow so this is likely to happen.
In pro football players are far more willing to take unfavorable shots as well. It's rare that a striker will just let it rip into a crowd of people and hope for the best, like they're scared of losing possession for the team.
